First off you can go to any hill like bunny hill and click it then when the box comes up go and click another one and when the race starts you should be racing four people on bunny hill.

No it doesn't remember when they changed the courses, well that still isn't there...

I think it worked for me. There were 2 penguins (including me) on the Ridge Run.
